Bypassing Process
5. 2000 kg of orange juice containing 15% solids is strained giving 1600 kg strained juice
and 400 kg of pulpy juice. The strained juice is concentrated in the vacuum evaporator to
a solid concentration of 60%. The 400 kg of pulpy juice is by passed and mixed with
concentrated juice in the mixture to improve the flavour. The final concentrated juice
contains 48% solids. Calculate (a) the water evaporated and final concentrated juice (b)
wt% of solids in strained and pulpy juice.
